Whew - today was another busy one, but thankfully, I am much less cranky than I was at this time yesterday! Perhaps it's because I had more food in my tummy. :)
I tried to sleep in a bit again today, but the neighbors seem to think 8:30 is the best time to mow the lawn. So, I was up and at 'em! (Okay, it's not super early, I know...) I started the day with my gummy vitamins (haven't forgotten yet!) and a bowl of Honey Nut Cheerios, ground flaxseed, and UVAB.
I can't believe how much UVAB I can have for so few calories! Also, please note that I am trying really, really hard to take prettier pictures. I am pretty much the Queen of Photography, but I royally suck at food pictures.
After breakfast, I attempted to ride to the bike shop to get my issue from yesterday solved; however, after nearly wiping out about eight times in muddy patches on the trail, I finally turned around when I couldn't pass through mud without getting ankle-deep in it. I'm pretty sure the last thing Central Iowa needs right about now is more rain!
I only made it 3.5 miles roundtrip, so when I got home, I hopped in the car to go to spinning class at the gym. O...M...G. Toughest. Workout. Ever. Or maybe it was just my instructor (my amazing friend/colleague/yogi). Anyway, see for yourself just how tough it was:
Haha - isn't that the most disgusting picture?! My hair WAS in a cute bump but became matted to my forehead in the first 30 seconds of the workout. And my shirt WAS light gray, as you can see on my sports bra-covered boobs. It was definitely not a waste of 45 minutes, that's for sure!
I was fairly starving after that - and thirsty! - so made myself a delicious lunch:
A Light Italian Herb Flatout wrap stuffed to the brim with one wedge of Queso Fresco and Chipotle Laughing Cow cheese, turkey, lettuce, and 1/4 an avocado - with a side of juicy white peach - was just what the doctor ordered!
Just look at all of the deliciousness I packed into one "sandwich"!
After my lunch and shower, I had fully intended on going to back to the coffee shop to make serious headway on lesson plans and other miscellaneous school stuff. However, I was utterly pooped and decided that lying on the couch was a much better option.
But don't worry: I eventually felt guilty for doing nothing, so peeled myself away from my oh-so-comfy sofa, ate a snack, and headed to Caribou.
Honestly, if you've never tried Larabars, you must. Today's flavor was Ginger Snap, and it totally tasted like an actual cookie. So. Good.
Even though I say I worked a good two hours on school stuff, I'd be lying if I didn't say some of the time was spent procrastinating: for example, finding something to cook tonight. After scouring Cooking Light's website, I found a recipe for which I only needed to purchase three ingredients: Pasta with Spinach and Prosciutto:
It was very good; I absolutely love tortellini - probably my favorite pasta - and spinach and garlic are also two of my faves. However, I was not completely impressed with the flavor of the prosciutto. Perhaps it is because of the brand, or maybe it's because I'm not much of a red-meat eater. I'm not sure. But, I know I needed the protein, so I ate it regardless. And on the side, an overflowing bowl of carrots and cherry tomatoes.
It truly was a meal of favorites - YUM.
Well, I'm about to finish my second bottle of Nalgene (in addition to the 24 ounces of water I drank during spinning) and then hit the sack! I need to wake up early to take my car to the shop: dumb "Check Engine" light... Ciao!

Emily, I enjoy reading all of your blog posts, and I think you're an amazing person. But you need to realize that you are not eating enough calories. Did you know that under 1200 calroies is considered starving by most realiable sources? I also undertsand that you believe that you need to lose weight. I think you're gorgeous and don't need to change your body at all. But I understand what you're feeling. I'm just concerned that you're really not eating enough food. You might consider reading some Dr. Oz on weight loss. He sugggests that you eat 5 or 6 meals per day. Anyway, I know you didn't ask for my advice, but I was beginning to get concerned. I'll shut up now.
ReplyDeleteI agree that the last couple of days were bad regarding calories. My goal is to eat 6 meals a day with a good protein/carb ratio. Trust me: I'm not starving myself. I enjoy food way too much! I just want to be healthier, and I honestly feel like I am - even in just a one-week time period. I greatly appreciate your concern! I promise you don't have to worry, though: I'm not a dummy. :) Loves!
ReplyDeleteOh, I'm sorry if I came across as lecturing--I certainly know you're not a dummy. You are one smart cookie. I guess I was just concerned when I saw some of your calorie counts. You are a very impressive person--you will always have my support and love. I think you're great!
